The most common question we get asked on wholesale orders is how much and what do I get? We have put together some averages to help in your decision. Keep in mind, these averages are based on different cutting instructions, it depends on how you want your beef cut as certain cuts effect others.

Another common question is how is the pricing based? The pricing is $7.50/lb based on the hanging weight. The average cost of each is listed with the averages.

Averages

1/8 of Beef

Typically there is 40-50 lbs of beef based on these cutting instructions:

3lb roasts, 1 in steaks, stewing beef, ground beef, soup bones.

Minced and other:

- 15-18 lb ground beef

- 2-4 lb stewing beef

- 1-2 4lb bags of bones

- 2-4 lb liver (if wanted)

Roasts:

- 1 prime rib roast (depends if you want rib steaks)

- 1 blade

- 1 short rib roast (possibly- only 1 per quarter)

- 1 rump roast (possibly- only 1 per quarter)

- 2 round roast (unless chosen to be ground or into stewing beef as not a prime cut)

- 1 eye of the round roast (possibly- only 1 per quarter)

- 1 sirloin tip roast (possibly- only 1 per quarter)

- 1 brisket (possibly- only 1 per quarter)

(You are gauranteed 3-5 roasts, some roasts there are only 1 per quarter. If you really want a specific roast please specify on your cutting instructions.)

Steaks:

- 2-3 rib steak (unless prime rib roast is chosen)

- 2-3 T-Bone steak (unless strip/tenderloin is chosen)

- 2-3 Striploin steak

- 2 tenderloin steak

- 1 flank steak (if chosen)

- 1 Sirloin steak

Total price is around $600 give or take.

Note: Since an 1/8 beef is so small, whichever customer orders the 1/8 first will choose the cuting instructions.

A 1/8 beef is perfect for 1-2 people that don't eat a lot of beef for a year. This requires aroun 2-3 cubic feet of freezer space.

1/4 Beef

Typically there is around 100 lbs of beef based on these cutting instructions:

3lb roasts, 1 inch steaks, stewing beef, ground beef, soup bones.

Minced and other:

- 30-36 lb ground beef

- 4-8 lb stewing beef

- 2-3 4lb bags of bones

- 4-6 lb liver (if wanted)

Roasts:

- 1 prime rib roast (depends if you want rib steaks)

- 2 blade

- 1 short rib roast

- 1 rump roast

- 3 round roast (unless chosen to be ground or into stewing beef as not a prime cut)

- 1 eye of the round roast

- 1 sirloin tip roast

- 1 brisket

Steaks:

- 4 rib steak (unless prime rib roast is chosen)

- 4 T-Bone steak (unless strip/tenderloin is chosen)

- 7 Striploin steak

- 5 tenderloin steak

- 1 flank steak (if chosen)

- 2 sirloin steak

Total price is around $1250 give or take.

This is perfect for about 2-3 people for a year- Quarter beef requires about 3.5 cubic feet of freezer space.

1/2 Beef

Typically there is around 200 lbs of beef based on these cutting instructions:

3lb roasts, 1 inch steaks, stewing beef, ground beef, soup bones.

Minced and other:

- 65-70 lb ground beef

- 10-15 lb stewing beef

- 4-6 4lb bags of bones

- 10-12 lb liver (if wanted)

Roasts:

- 2 prime rib roast (amount depends if you want rib steaks)

- 4 blade

- 2 short rib roast

- 2 rump roast

- 6 round roast (unless chosen to be ground or into stewing beef as not a prime cut)

- 2 eye of the round roast

- 2 sirloin tip roast

- 2 brisket

- 1 Tenderloin roast (amount depends if t-bone or tenderloin steaks are wanted)

Steaks:

- 8 rib steak (amount depends if prime rib roast is chosen)

- 9 T-Bone steak

- 11 Striploin steak

- 7 tenderloin steak

- 1 flank steak (if chosen)

- 5 sirloin steak

Note: On a T-bone and Strip/tenderloin can be chosen, it would cut the amount of each in half.

Total price is around $2500 give or take.

This is perfect for 4-6 people for a year. A 1/2 beef is where you take one whole side of the cow.  This will stock your freezer full and then some- Half beef requires 7-8 cubic feet of freezer space.

Whole Beef

Typically there is around 400-420 lbs of beef based on these cutting instructions:

3lb roasts, 1 inch steaks, stewing beef, ground beef, soup bones.

Minced and other:

- 130-145 lb ground beef

- 20-30 lb stewing beef

- 6-10 4lb bags of bones

- 15-20 lb liver (if wanted)

Roasts:

- 4 prime rib roast (amount depends if you want rib steaks)

- 7 blade

- 4 short rib roast

- 4 rump roast

- 12 round roast (unless chosen to be ground or into stewing beef as not a prime cut)

- 4 eye of the round roast

- 5 sirloin tip roast

- 4 brisket

- 2 Tenderloin roast (amount depends if t-bone or tenderloin steaks are wanted)

Steaks:

A whole beef is where you buy the whole cow.  This is perfect for a large family or for buying with friends and family to share- Whole beef requires 13-14 cubic feet of freezer space.

Unless you are a butcher it can be hard to know what each cut is and where it comes from.

The reason why some cuts are more tender than others is because they are used less. You can see the round would be a well used muscle and it is on the hind leg and a used to get up and walk, where as the tenderloin is in the middle and wouldn't be used very often making it more tender.
