What kind of beef do you sell?

We sell hormone-free, ethically and locally raised, corn-fed beef. Our beef isnotgrass-fed. We have been producing this same beef and it has fed our families for over 25 years.

What breed of beef do you sell?

We have a few different breeds. Our main breed is Limousine/Hereford cattle. We use a Limousine bull and mainly Hereford and Limousine cows, but have a dexter, highland, a couple simmental, angus, holstein cows. 

What do you feed your beef?

We feed corn-silage, grain and hay, all raised ourselves.  

Ordering

I see some items are pre-order, why is that?

We have beef throughout the year, but not all processed at once. We prefer to have the animal fully sold before having it processed. We process one or two at a time to full-fill both wholesale and individual orders.

How do I pay for my order?

For wholesale beef: We require a deposit upfront and once your beef is fully processed we will calculate the rest of the cost.  

For individual cuts: you pay for a portion of the cut at the time of order and then you will receive an updated invoice once your order is fulfilled.

For ground beef and stewing beef: these come in 1lb packages, so the price you pay at the time of order is for 1lb.

We take e-transfer, credit, debit, and cash.

Wholesale

What cuts will I get in my wholesale order?

This is a very common question. We will use a half beef as an example. In this example the request was 3lb roasts, 1 in thick steaks. There will be approximately:

- Roasts: Sirloin Tip- 1-2, Round roast- 8, Eye of the round-2, Blade- 3, Short Rib- 1-2, Rump Roast- 2, Prime Rib- 1-2 (depends if you want rib steaks), brisket- 1-2

-Steaks: Flank-1, Striploins- 8 (around 6-10 oz), Tenderloins- 8 around 3-5 oz, Rib steak- 8 (around 10-20 oz, note the prime rib note above), T-Bone- 8 (around 11-20 oz), Sirloin Steak- 4(around 25-35 oz)

**NOTE: If you do striploin/tenderloin cuts and t-bone cuts you will have less of each

-Other cuts: Ground Beef- 25lb, Stewing beef- 10lb, Bones- 4 bags (around 4lb each), Organ meat is available upon request

Once you place your wholesale order, you will receive a cutting instructions form.

Note for Quarter Beef orders: When you order a quarter of beef, you are getting a half of a half, which means the half of beef is cut the same for each quarter, with steak thickness, roast size, and either T-bone steaks OR New York Strip steaks plus Filet Mignon Steaks. We will try our best to accommodate all preferences. For an eighth of beef, whoever placed the order first will have priority for the cutting instructions since both eighths have to be cut the same.

How much beef will I get?

Another great commonly asked question! This can be a bit confusing. It is important to understand how the weights and pricing work when ordering wholesale. Some first time buyers can sometimes be surprised by the actual amount of beed they receive.

Live Weight: The weight of the live animal

Hanging Weight: This is the weight of the animal after it is butchered and hung to age. This weight does not include the head, hide, hooves, blood, and innards. These are all removed before the hanging process.

Boxed Weight: This is the weight of meat the customer will receive. The reason this weight is different than the hanging weight is because of the cutting, trimming fat, tissue, bones, as well as the moisture that comes out after the drying process. Customers are charged on the hanging weight rather than the boxed weight. From hanging to boxed weight we usually loose about 25-40%. This caries from farmer to farmer and depends on the individual animal. 

Typically there is 110 lb in a quarter beef.

How much freezer space do I need?

Whole Beef: 15-16 cubic feet 

Half beef: 8-9 cubic feet

Quarter Beef: 4-5 cubic feet

How much do you sell your beef for?

We sell our wholesale beef for $7.50/ hanging lb. This includes all your processing costs.
